Cape Town born Tijn is one of the new generations of chefs who focus on using fresh, local and sustainable ingredients, combined with classical techniques which he learned while travelling abroad to the UK, France and Spain. His cooking has already been heralded by Eat Out, when Hartford House was named in the Top 20 restaurants in South Africa for two consecutive years. Tijn has made his name serving some of the most innovative, elegant and fun food in KZN.
Tijn left Hartford House in February, and has been enjoying some time off, away from the kitchen. "I am constantly learning and experimenting. It's not about finding a recipe and sticking to it, but rather about continually evolving and changing things up. We just need to remember that ingredients are key and so to try and source our ingredients locally wherever possible is what will make the difference. We only get one chance at this life but if we do it right, once is enough!"
